What do *your* fried eggs look like? Sunny-side-up & beautiful or once-over-lightly to a "T"? Any other way?
Hi -
My father had a friend who had been an actress in Germany before coming to the US. When you went to her house, at breakfast time she was so busy entertaining you with stories about her past, that breakfast was quite neglected. Her coffepot splattered all over the stove, toast you made yourself, and the only edible part of her fried eggs ~ one of her few culinary achievements ~ was the yolk, and that was 'just barely so.' The rest of the egg was solid friends with the bottom of the frying pan until later soaked off ... a perfect, white volcano!
My mother taught me to cover my sunnyside eggs half way thru cooking so they would steam nicely and would easily slip out of the pan. But, I never have forgotten Asta's fried eggs, bless her!

I use three different methods. Make sure the oil or margarine is hot and
a. let the egg fry with the yolk shining at the centre
b. flip hot oil over the yolk going round the egg until the yolk is covered.
c. turn the egg upside down to be cooked on both sides
