Technology has certainly come a long way. What was basically done was they took Elvis' original recording of the song and removed all of the audio except for his voice. They then brought in new musicians to update the instrumentals of the song.
As for Martina McBride, she recorded her parts of the song earlier this year (2008). Everything was then mixed together.
In the music video, they took footage from Elvis' 1968 NBC Comeback Special and they superimposed Martina into the video using green-screen technology. I have a very strong feeling that this video was not only done to promote the "Christmas Duets" album, but also to celebrate the 40th anniversary of the NBC Special.
What you might be interested to know is that for the album, they used Elvis' voice from the original 1957 studio recording of the song, whereas for the video, they used Elvis' vocals from 1968.
